teething problems for our recommission project

We hope to mot our car very shortly and gave it a sneaky test run recently.
It starts great hot or cold, idles smooth and with a clean looking exhaust. Compression tests done and seem decent for a long laid up engine.
Sat running it runs well, picks up well and sounds good. Idling the fan cuts in and out set at 90 ish.
There are issues though and a little guidance would be useful.

1) The viscous coupling was clapped, it is fitted with an electric fan on thermostat. All seems good but what range on the temp gauge would be normal . I realise they are not stabilised like modern ones so fluctuate up and down the scale. ~We have no previous experience of a rotary either.

2) The carb was cleaned, all jets cleaned and the accelerator pump replaced which cured all its awful running in the workshop. Driving it seems the car kangeroos a lot! it certainly is not right.

It seems like fuel, it is not a misfire.

Other things done to this point on the engine. All cooling flushed, new hoses, thermostat, rad clean, rad cap, electric fan (no engine fan) a new fuel pump which displays flow at the carb within spec and fuel hoses, fuel filter, and an extra one just before carb. Dizzy cap, rotor, leads, plugs.
